COVID finally caught me


I’ve made it the entire pandemic so far staying COVID free. I even worked the front lines of retail November 2019 in one of the first cities in the country to get hit with it. Darn it all, I guess this means I’m just as human as the rest of you.

I’m not entirely certain what to count as day 1 as I was first hit with a sinus infection. The minute that started to clear, other symptoms like cold and flu stepped in and made themselves known. So far I’ve been walking 3 miles a day, biking 5 miles and running a little bit. I do my work out, shower, nap and go on with my day hiding out in my office so as not to infect the rest of the family. I read online that pushing your body, if you are able to, helps. So, for now, that is what I’m doing. I have not had a fever and taste and smell are still intact. I’d like to have a talk with COVID about that damn cough though.

Many humbling thoughts continue to run through my mind while I recover from COVID. I cannot stop thinking about all those people who went first. I am grateful for the time that I have in my favor, time for the world to learn and take action. Perhaps my experience would have had a very different outcome.

On a positive note, my box of wheat protein isolate and resistant corn starch finally arrived. Baking tests will begin once I am symptom free. I have been researching alternative baking options for keto and darn if I cannot get my hands on resistant wheat starch. If you are reading this and have a connection, please let me know. I am a hound when I get the research bug. Baking better keto options is something I am determined to figure out. The minute I spotted resistant starches showing up on commercial, retail ingredient lists I was on it.

There is so much more to share on this topic of resistant wheat starch that I will hold off until another post to share what I have learned. For now, a shower is calling and then a nap. Stay healthy.
